This year my Husband was hinting at the nostalgia of a home-made from scratch pumpkin pie, I decided to return to the roots of what I love most: preparing something for him since he does so much for me. Not for perfection’s sake, but for the connection — to the ingredients, to the process, and to the beautiful simplicity that lives inside every homemade pie and to put a smile on his face.

New generation and new pumpkin cutting tools have evolved. I discovered the 20v Brushless Cordless Variable-Speed Oscillating Multi-Tool from Harbor Freight to slice open my pumpkin. Talk about empowering, and it’s far easier to cut through the pumpkin. Maybe I have a touch of the Home Improvement (Tim Allen) in my character, or I am a True Gadget Gal.
Gathering the Ingredients
Before I even touch a measuring cup, I like to begin by setting the mood. Candles lit. Soft music playing — maybe Norah Jones or a bit of acoustic folk. I couldn’t play this on video due to copyright. The windows cracked open just enough to let the cool autumn breeze mingle with the aroma of cinnamon and nutmeg.
Here’s what you’ll need for the pie:
Filling
- ½ cup packed dark brown sugar
- ⅓ cup white sugar
- ½ teaspoon salt
- 2 teaspoons cinnamon
- 1 teaspoon ground ginger
- ¼ teaspoon nutmeg
- ¼ teaspoon cloves
- ¼ teaspoon lemon zest (this tiny addition brightens the whole flavor profile!)
- 2 large eggs plus 1 egg yolk
- 2 cups pumpkin purée (homemade or canned — I love using roasted sugar pumpkin purée when I can)
- 1 (12 oz) can of evaporated milk
Crust
- 1 ¼ cups all-purpose flour
- ½ teaspoon salt
- 1 tablespoon sugar
- ½ cup (1 stick) cold unsalted butter, cut into small cubes
- 3–4 tablespoons ice-cold water
This crust recipe is buttery, flaky, and forgiving — perfect for both seasoned bakers and beginners who just want that golden, rustic finish that whispers “homemade.”
Creating the Homemade Crust
The secret to a perfect crust isn’t just in the recipe — it’s in the rhythm. Cold butter, light hands, and patience.
Start by combining your flour, salt, and sugar in a large bowl. Add the butter and work it in with a pastry cutter or your fingertips until the texture resembles coarse crumbs — little pea-sized bits of butter scattered through the flour. Don’t overwork it; those tiny butter pockets are what create that tender, flaky magic.
Then, add the ice water one tablespoon at a time. You’re not making a dough so much as coaxing it together. The moment it holds its shape, stop. Flatten it gently into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
During that chill time, I usually tidy the counter, light another candle, and prepare my filling ingredients. There’s no rush — just presence. That’s one of the things I love about baking: it forces you to slow down, to breathe, and to create space for beauty to unfold.
The Filling: Spiced and Soulful
In a large bowl, combine your sugars, salt, cinnamon, ginger, nutmeg, cloves, and lemon zest. Stir well to break up any clumps and let the aromas bloom — this is the scent of fall in a single breath.
In a separate bowl, whisk the eggs and egg yolk until smooth, then add the pumpkin purée and evaporated milk. Slowly combine your wet and dry ingredients, whisking until the mixture is velvety and beautifully golden-orange.
The lemon zest might seem small, but it’s transformative — it lifts the heaviness of the spices just enough to make the pie taste alive. It’s that little unexpected touch that makes this recipe mine, and perhaps soon, yours.
Grandma’s Secret: Just a touch of Molasses and if desired a sprinkle of All Spice to dust the crust before you pour the pumpkin puree.
Bringing It All Together
Roll out your chilled dough on a lightly floured surface until it’s about 12 inches in diameter. Carefully transfer it to a 9-inch pie dish, pressing it gently into the corners. Trim the edges, then crimp them however your heart desires — rustic and casual or perfectly scalloped.
Pour in your filling, smooth the top, and take a deep breath. This is the moment where everything you’ve done — the measuring, mixing, and waiting — comes together. It’s not just pie. It’s intention.
Bake at 425°F (220°C) for 15 minutes, then lower the temperature to 350°F (175°C) and bake for another 40–50 minutes, or until the center barely jiggles. The kitchen will smell like spiced heaven — the kind of aroma that pulls everyone in without a word.
Let it cool completely before slicing. Patience, once again, rewards you.

When I pull the finished pie from the oven, I always pause for a moment. The crust, golden and flaky. The filling, perfectly set and glowing in the light. There’s something deeply satisfying about creating something with your hands — something that didn’t exist before you stepped into the kitchen.
