- 8 oz Cream Cheese (room temperature)
- 1 ½ cups Mozzarella or Monterey Jack (Jack melts beautifully here!)
- ½ cup Sharp Cheddar
- ½ cup Parmesan (freshly shredded, not canned)
- ½ cup Sour Cream (I used Daisy Light, squeezable for convenience)
Instructions
- Preheat oven to 375°F.
- Prep your corn: If in season, cut fresh kernels off the cob with a sharp knife. (I show a neat trick for this in my video!) Otherwise, frozen works perfectly fine.
- Mix chicken and corn in a large bowl.
- Incorporate cream cheese a little at a time, then fold in your shredded cheeses (reserve a bit of each for topping later).
- Stir in the remaining ingredients—mayo, sour cream, cilantro, lime juice, and spices. For extra heat, mix mayo with hot sauce before blending.
- Transfer mixture to a greased casserole dish, spreading evenly. Cover with foil.
- Bake 25 minutes. Remove foil, sprinkle on the remaining cheese, and bake another 8 minutes until bubbly and golden.
