Smoked Carne Asada on the Traeger: Keeping Summer Simple and Delicious

by: Laura Dusek

As the days grow longer and temperatures begin to climb, summer cuisine naturally shifts toward meals that keep the kitchen cool while still delivering incredible flavor. Outdoor cooking, easy summer meals, and relaxed evenings on the patio become part of the season’s rhythm. Tonight, I prepared a beautiful Smoked Carne Asada on the Traeger for my husband and myself—a meal that captured everything I love about summer living: simplicity, fresh ingredients, and food meant to be shared.

Sometimes, easy really is the best policy when the summer heat arrives. Fruit salads, tacos, grilled vegetables, corn on the cob, and foods that can be enjoyed with your hands often become staples around our table. There is something wonderfully casual and inviting about gathering around a meal that doesn’t require formality.

One of my favorite movie moments comes from the 1995 remake of Sabrina starring Julia Ormond and Harrison Ford. While enjoying Moroccan cuisine together, Sabrina encourages Linus to set aside convention and simply enjoy the experience.

“Ah, it’s really so much better if you eat with your hands. Do you mind?”

I completely agree.

Food should be experienced—not merely eaten.

The Star of the Evening: Smoked Carne Asada

Tonight’s carne asada spent time soaking in a flavorful blend of spices before finding its way to the Traeger.

The seasoning profile included:

  • Chili Powder
  • Ground Cumin
  • Smoked Paprika
  • Garlic Powder
  • Onion Powder
  • Mexican Oregano
  • Fresh Cracked Black Pepper
  • Sea Salt

To balance the savory flavors, I incorporated fresh orange citrus, allowing the natural sweetness and acidity to tenderize the meat while adding brightness to every bite.

The result was deeply flavored beef with subtle smoke, warm spices, and hints of citrus throughout.

Once smoked, the carne asada developed beautiful caramelization around the edges while remaining tender and juicy inside.

Building the Perfect Taco

What I love most about taco night is that every person can build their own perfect bite.

Tonight’s lineup included:

Fresh Flour Tortillas

Soft, warm flour tortillas provided the foundation for every taco.

Refried Beans

Rich and creamy refried beans added comfort and heartiness.

Sautéed Mushrooms & Onions

Slow-cooked mushrooms and sweet onions created a savory layer that paired beautifully with the smoky beef.

Fresh Cilantro

A generous handful of cilantro brought freshness and color.

Creamy Guacamole

Fresh avocado added richness and balanced the spice profile.

Sour Cream

Just enough to cool the palate and bring everything together.

Fresh Lime Juice

A light squeeze of lime over the finished taco brightened every flavor and added that final touch that makes Mexican-inspired cuisine shine.

Why Summer Meals Matter

One thing I’ve noticed over the years is that some of our most memorable meals are often the simplest.

They aren’t necessarily holiday dinners or elaborate celebrations.

They’re Tuesday evenings.

They’re quiet conversations on the patio.

They’re meals shared after a long day while the sun slowly disappears behind the trees.

Summer cuisine has a way of inviting us to slow down.

To linger a little longer.

To appreciate the people sitting across from us.

To enjoy food without rushing through it.

There is something deeply satisfying about preparing a meal outdoors and then gathering around the table with people you love.

No complicated preparation.

No elaborate presentation.

Just good food and good company.

A Lifestylio Thought

One of the beautiful lessons food continually teaches us is that joy doesn’t have to be complicated.

Sometimes it looks like smoky carne asada, fresh cilantro, warm tortillas, and a squeeze of lime.

Sometimes it looks like sitting outside on a warm evening, sharing stories, and eating with your hands.

And sometimes, those simple moments become the ones we remember most.
