We traveled to Casper, Wyoming this past week to explore a property we’ve had our eye on — one of those places that makes you pause and wonder, Could this be home?

When you’re standing on the edge of possibility like that, you don’t just tour houses. You explore the rhythm of the surrounding towns. You taste them. You sit in them. You listen for what feels like belonging.

And if we’re going to explore a potential new home base, we’re going to start with pizza.

Because pizza for us is never just a quick bite. It’s an experience. A mood. A moment at the table that tells you something about a community.

That’s how we found ourselves at Pizza Carrello in Gillette, Wyoming — and let me tell you right now… this one has officially landed in my Top 5.

Before you take my advice and go — do yourself a favor.
Don’t step on the scale afterward.

The Beginning: Spinach, Artichoke & Pure Joy

We were welcomed by Janice — three years in and still serving with the kind of joy you can’t fake. The kind that makes you feel like you’re not just a customer passing through, but a guest.

We began with the Artichoke & Spinach Dip.

Now listen carefully — I am not typically a spinach person. If there is even a whisper of bitterness, I notice. But what arrived at our table? Pure heaven.

Instead of chips or bread, they serve it with soft, fluffy pizza dough baked into a giant pretzel-style arrangement and brushed generously with garlic butter. It was warm. Pillowy. Tear-apart perfection.

The dip itself? Creamy. Balanced. No nose-curling spinach flavor. Just rich, comforting indulgence that had me asking, “Where’s the spoon?”

And yes — I took what was left in the bowl and spooned it right onto my pizza slice later. No shame.

In my opinion, you could order this with a small salad or soup and call it a meal.

Verdict: Absolutely get the dip.


The Carnivore (With a Twist)

Next came the Carnivore Pizza.

On paper, it doesn’t sound overly adventurous.
In reality? It’s divine.

And I don’t use that word lightly.

Built on authentic San Marzano tomato sauce — homemade and layered with flavor — then topped with mozzarella, ham, pepperoni, sausage, and thick, generous chunks of Daily’s bacon.

Let’s talk about that bacon for a moment.
Not crumbles. Not dust.

Actual bite-sized pieces.

We added pineapple (because balance is important in life), and it was fresh — not canned. Sweet. Bright. That pop of flavor against the savory richness? Perfection.

Everything about the sauce whispers, “This was made with care.”

It tastes like someone loves what they’re doing.


From Food Truck to 140 Seats

Now here’s the part that made me love this place even more.

Janice shared a bit of the story behind it all.

Pizza Carrello began as a small food truck with a portable pizza oven. Word spread. People talked. Demand grew. That little operation turned into a tiny drive-thru shop — espresso stand size.

And today?

Two custom fire ovens. A beautifully expanded restaurant seating around 140 guests. A small bar. Walls lined with artwork from local community artists.

From food cart to full restaurant — built on flavor and reputation.

That kind of growth tells you everything you need to know.

The two ovens each have their own purpose — one dedicated to appetizers and one strictly for pizza. Each one a piece of craftsmanship in its own right. Watching them work is half the fun.

If the dining room isn’t packed, Janice will happily share stories. Every dish has personality. Every menu item carries intention.

It feels lived in. Established. Proud.


And Now… The Dessert

I’ve kept you waiting long enough.

The Nutella Ella Calzone.

Close your eyes for a second.
Remember the first time you bit into something so sweet and decadent that you just stopped talking?

Double that. (heart)

Soft dough folded around warm Nutella hazelnut spread. Glazed with a light sugar drizzle. Finished with powdered sugar that practically melts on contact.

It arrives unassuming.
And then you cut into it.

The warmth. The chocolate. The texture.

I may or may not have said, “Just bury me with a fork and a slice of this so I can share it with Jesus when I get there.”

Dramatic? Possibly.

Accurate? Absolutely.

Yes, it’s indulgent. Yes, you may question your life choices halfway through. And yes — it is completely worth it.
